We pride ourselves on creating some of the world's finest artisanal chocolate. All of our chocolate is made in small batches, in traditional machinery with careful attention to flavor development. We use only the world's finest cocoa beans and gently develop and coax their flavors until they reach their full potential. Each of our bars are absolutely incredible in flavor and are sure to delight even the most demanding connoisseur. If they were not, we would not offer them.
Chocolate Maker's Notes:
This dark chocolate sampler is the perfect way to explore the unique flavor notes that our single origin chocolate offers. Each bar is made only with the cacao beans of a single plantation or co-operative. Each plantation's beans have unique flavor notes that arise both from the genetics of the tree as well as the conditions of the local ecosystem. We never add additional flavors to our chocolate. The only ingredients are the products of the cacao beans, a little bit of sugar, and a tiny bit of vanilla. Much as with fine wine, the flavors you taste are purely due to the simple ingredients we use.
Our philosophy of chocolate making is to be as true to the ingredients as possible. Rather than making chocolate fit someone's expectation of what chocolate is to be like, we seek to bring out the natural flavors already in each cacao bean. You can experience this commitment to the ingredients themselves by comparing and contrasting each of our dark chocolate bars to one an other. We have separately tasted three different single origin bars, so far. All different...all great. At some point during this quest we will taste "side-by-side" to get a real time caparison. We have been enjoying and comparing red wine for years. Don't know why we waited so long to discover fine cocao. But we're here now, and Amano is the absolute best place to start!
